Recipe of Omelette Issoise

For 4 people


15 eggs
70g of minced truffles
50cl of cream


  • Break the eggs the day before and mix them with 50g of truffles.
  • Add some salt and pepper.
  • When you are preparing your omelet, boil the cream and add the remaining 20g of truffle.
  • Let infuse just a moment.
  • Cook the omelet and put the truffle cream.
